Spicy Chicken Sandwich
I love a grilled spicy chicken sandwich! I try to make these a few times a month and wanted to share my recipe of pure deliciousness. They pack a little heat and the sauce is a perfect combo with the seasoning.

Directions:
-Create sauce for the sandwich and let it sit in the fridge for one hour.
-Trim chicken breast to manageable sizes for your sandwich.
-Coat with olive oil
-Season with Kentucky Kick & Smoked BBQ Rub
-During the time of seasoning light your charcoal chimney and let it start for your heat source. 10 mins prior.
-Have Tomatoes, lettuce & sauce prepped prior to cooking.
-Set two zone cooking, indirect and direct.
-Place hot active coals from charcoal chimney on top of coals that are not lit. Set your vents for a grilling temp of 450ish.
-When temp is reached sizzle your bacon and place to the side.
-Grill chicken breast over direct heat for 3-5 mins. Thickness of the breast determines duration.
-Flip and repeat.
-After the second flip move to indirect zone and monitor temp until you reach 150-155. Sauce breast at this temp.
-When breast reach 160 top with pepper jack cheese.
-Toast buns and assemble chicken sandwich. The order is sauce both buns, lettuce, tomato, chicken patty & bacon.
-Serve and enjoy!

Sauce ingredients:
-1 cup mayo
-1/2 cup bbq sauce
-2 tablespoons pickle relish
-1-2 tablespoons truffle hot sauce (you decide your level of heat).
-1 tablespoon Smoked BBQ Rub
