I seasoned my steak with garlic truffle seasoning and let sit for about 30-40 mins. During this resting period I lit my charcoal and got my temp set (400) while making my spicy Chimichurri, as a side note: it is best to let the Chimichurri sit and settle for about 1 hour minimum. When the temp hit 400 I used some cooking oil in my cast iron and placed on the grill to get my oil heated up for the homemade fries. I then grilled my skirt steak and flipped after 5ish mins. After my first flip I started to fry my fries (6 mins). It is important to time everything so it is all warm for serving. While the steak was resting (5ish mine) I staged my fries and then made my slices. The ending result is rewarded with this amazing life changing steak fry platter
