MASSIVE TOMAHAWK WITH MY ROASTED GARLIC BACON BUTTER USING BEAR MOUNTAIN BBQ GOURMET BLEND WOOD PELLETS
I absolutely love using these amazing pellets that are 100% natural wood! They add an amazing balance of smoke flavor that compliments the juicy tenderness of the steak every time!
-Crisp Bacon in a skillet, dice prior
-Roast Garlic in the bacon fat and then chop
-Use a whole block of butter (let sit out for 2 hours for room temp) and combine all ingredients and wrap in plastic wrap just like in the video. Place in fridge for two hours.
-After the first hour get the tomahawk out of the fridge and bring to room temp.
-Coat with Avocado oil (1 tablespoon) and season with salt, pepper & garlic. Let it sit for 20ish mins.
-Fill smoker hopper with Bear Mountain BBQ pellets (Gourmet blend).
-Set temp to 250° and let it heat up. Once temp is reached Smoke indirect until internal temp of 110.
-Have another surface (or same grill) at a searing temp of 500+ degrees waiting and sear 1-2 mins each side.
-Let rest for 15 mins, during this resting time spread the Roasted Garlic Bacon Butter on the tomahawk and let it melt! TIP: have the better sitting out for at least 20 mins at room temp to soften.

-8 ounces soften butter, room temp
-4-5 garlic cloves, roasted & then minced
-2-3 strips of bacon chopped
-1/3 cup parsley leaves, chopped
