HOT N FAST HONEY GLAZED BBQ RIBS WITH BEAR MOUNTAIN BBQ
Hot and fast is a great method for anyone who is crunched for time and doesn’t have a full day to do the low N slow. There’s really not much to it besides temp control and monitoring the internal temp of the meat with a few squirts if water or apple cider vinegar. This Hot N Fast method only took a total of 3 1/2 hours and I pulled them at 205! Super tender and juicy still! I also have a delicious dry rub and sauce recipe for you to use!

Directions:
-Remove membrane from back of slabs.
-Create Dry Rub.
-1-2 tablespoons it’s mustard as a binder and spread over ribs.
-Season entire slab generously.
-Fill hopper with Bear Mountain BBQ Hickory Pellets
-Set smoker for 325 (Hot N Fast)
-Once temp is there go ahead and start the cook.
-after 1 1/2 hours spritz with apple cider vinegar (just a little bit)
-Two hours in create Honey glaze (let is sit for 1 hour, fridge is okay).
-When the temp reads 190, glaze first layer.
-When temp hits 203, glaze another layer.
-Pull at 205 and rest for 30 mins (wrap in foil)
- Slice and enjoy!

Dry Rub:
-2 1/2 tablespoons kosher salt
-2 1/2 tablespoons black pepper
-2 1/2 tablespoons Paprika
-2 1/2 tablespoons Chili powder
-1 1/2 tablespoons Southwest Smoke
-1/2 tablespoon cayenne (optional for some heat)

Honey Glaze:
-1 cup honey (raw and unfiltered)
-1/2 cup soy sauce
-1/3 cup BBQ sauce
-8 cloves garlic, minced
-1/2 cup brown sugar
