Bison is a fabulous lean meat that is slightly sweeter and lighter than your regular beef! I took 4 pounds of bison ground beef and turned it into a burger fanatics dream! With a little sweet heat pitboss seasoning and Jalapeño cheese filling I formed 8 1/2 pounds stuffed bison burgers! I’ll go into detail about how to make them and Ingredients below.

INGREDIENTS:
-4 pounds ground bison
-1/4 cup Sweet Heat Seasoning from Pitboss Grills
-1/2 cup BBQ sauce
-Grilled onions
-Tomatoes
-Romain lettuce

(Jalapeño Cheese Stuffing)
-2 blocks cream cheese
-4-6 Jalapeños, deseeded
-1/2 sweet onion, diced
-1 cup cheddar cheese, shredded
-6 strips bacon, diced

DIRECTIONS:
-Fire up the griddle on your KC Combo from pitboss grills and grill bacon until crisp. Also place jalapeños and onions on grills. This is prepping your cheese stuffing.
-Have your blocks of cream cheese out to be room temp (1-2 hours). Once bacon, onions & jalapeños are finished combine with cream cheese and shredded cheddar cheese. Place in the fridge if needed.
-Get one sheet of foil and season generously with Sweet Heat Seasoning.
-Creat 1/4 pound patties with creators in the center and place on top of seasoning, creator side up.
-Stuff half of your patties with the cream cheese stuffing and cover with the other patty. Shape and form a huge 1/2 patty. Make sure there are no cracks in the meat and it’s sealed.
-Use Pitboss Grills SMOKE IT app to set the pellet grill to 275.
-Once the temp is ready place patties on the grill. Sauce with BBQ sauce.
-40ish mins or internal 110-120 flip and sauce the other side with BBQ sauce.
-Once your internal temp is 135 of the bison burgers turn on the griddle and add onion & buns for toasting. Season onions with Sweet Heat Seasoning.
-Now it should be around 140 internal. Add cheese and let melt.
-Coat toasted buns with bbq sauce & add lettuce to the bottom bun.
-Now build burger with Bison patty, Tomato & onion
-Serve and enjoy!
